My favourite part of a meal is dessert and my favorite dessert is cupcakes so it’s fitting that the final recipe in my holiday cooking blog series features a treat from house mother Joanne Fay. The recipe is featured in the book The Consistently Consistent Cookbook and is the perfect snack to offer guests during the holiday season.
Black Bottom Cupcakes
Cream sauce:
- 1-8 oz. cream cheese
- 1 egg
- 1/3 cup white sugar
- 1-6 oz. package chocolate chips
Mix all together and set aside.
Bottom of Muffins:
- 1 ½ cup flour
- ¼ cup cocoa
- 1 tsp. baking soda
- ½ tsp. salt
- 1 cup water
- ½ cup oil
- 1 Tbsp. vinegar
Mix above ingredients together. With the muffin mix, fill muffin tins half full. Add a Tbsp. of the cream mix on top of each muffin.
Bake at 325 F for approximately 30 minutes. Test with a tooth pick to ensure the muffin is cooked thoroughly.
